THE HOMEMADE CHEESE FACTORY

The Demarcus family has been farming for over two generations. Originally the cheese was made only for family use and for some close friends. The farm’s founder Salvatore started to work with his father Francesco at a very young age. He settled down and had four children (two boys and two girls). They all work in the farm: Francesco and Riccardo look after the ewe and the farm in general; Anna Lisa and Veronica together with Salvatore make cheeses and ricotta.

The philosophy of the farm is to make cheese following  traditional and artisanal methods using only the ewe’s milk produced by them.

  • Matured and smoked cheese: S’affumadu ‘e Zizzu

  • Matured cheese: Grande Casu

  • Soft cheese: Casuttella

  • Fresh cheese: PEcoRETTA

  • Salted and smoked Ricotta
